Wrap 2 or 3 slices of prosciutto around each spear, starting from the bottom up . 4 . Arrange the spears on the prepared tray (you may need to do this in two batches)and lightly spray with extra virgin olive oil . 5 . Baked Brie en Croute: Ingredients: -1 wheel brie cheese (approx 175g) -1 sheet puff pastry, thawed -1 egg, beaten -1 tablespoon milk - Demerara sugar Instructions: 1. Preheat oven to 200°C (400°F) fan forced and line a baking tray with parchment paper.. 2 Cut out a circular piece from the centre of the pastry sheet using an appropriate cutter – I used an 8cm (3″) diameter cutter but you could use something larger or smaller if you wish.. 3 Place brie wheel in the centre of pastry circle, slightly off centre so you have room to wrap pastry around it.. 4 Trim excess pastry from around edge of cheese wheel – you can re-roll this trimmings to create texture on top if you like .. 5 Mix together egg and milk in small bowl for egg wash.. 6 Using a pastry brush, brush egg wash all over exposed surface area of brie wheel.. 7 Sprinkle liberally with demerara sugar, using more than you think looks necessary! 8 Carefully fold puff pastry over brie wheel so it forms an evenly thick crust all around – be sure not to pull or stretch pastry too much or it will tear .. 9Using a fork, press edges down firmly all around so they're well sealed .. 10 Transfer en croute parcel onto prepared tray and bake in preheated oven for 25 minutes until golden brown all over .. 11 Remove from oven & allow brie en croute to cool for 5–10 minutes before serving .. 12 Enjoy!
